Cauca is known for its high-elevation volcanic soils, cool nights, and steady rainfall, all of which produce coffees with bright acidity, clean sweetness, and balanced structure—the foundation for those chocolate, nut, and citrus notes you’re seeing in this lot.

 

This coffee comes from the Cafecauca Cooperative in Popayán, Colombia, where generations of small farmers cultivate coffee high in the Andes. Grown between 1,500 and 2,000 meters, the cool mountain air and rich volcanic soil create the perfect conditions for slow ripening and complex flavor.

 

Each farmer tends just a few hectares of land, handpicking ripe cherries and carefully washing and drying them under the sun. The result is a cup that reflects both place and people, smooth and balanced with notes of milk chocolate, nougat, almond, and a hint of citrus brightness. It’s a coffee rooted in community, care, and the steady rhythm of the Colombian highlands.
