Mexico Chiapas

Chiapas sits in the mountains of southern Mexico, and the farmers here are doing things the right way — small farms, their own micro-mills, and a processing protocol they take seriously. Cherry is hand-picked ripe, floated to pull out anything damaged, then macerated in airtight containers for up to 48 hours before being depulped, fermented, washed, and dried in the sun.

When farmers control every step themselves, it shows in the cup.

We roast Monday–Wednesday. Orders placed after Wednesday will be filled immediately if the coffee is in stock; otherwise, your order will be roasted and shipped the following week.
